French bread with fresh ricotta, lemon, black pepper, and mint:
Serves 8 to 10; yields about 1 cup topping
10 oz. fresh ricotta cheese (1 1/3 cups)
1 tsp. finely chopped lemon zest
Sea salt, and freshly cracked black pepper to taste
Extra-virgin olive oil
