Mini Pizzas with Mascarpone, Blue Cheese, and Caramelized Onions:
- Frozen Pizza Dough
- Yellow Onion
- Blue Cheese
- Fresh Parsley
- Freshly Cracked Black Pepper
- Extra Virgin Olive Oil
This is a great little hors d’oeurve to serve for your guests this holiday season. I actually found this recipe from Tyler Florence. I changed it up a bit. He adds grapes and walnuts to it, which I left out…but purely because I didn’t have those things, but it still turned out pretty amazing.
I let my frozen pizza dough defrost (I used whole wheat).
Slice up some onion, and saute in a pan with olive oil on medium low heat. You want the onions to caramelize, so cook them till they’re golden brown. This take a while. Set aside to cool once done.
Preheat the oven to 400 degrees.
Take little pieces at a time and mold then into tiny pizzas with your hands. Once you have made as many as you want, place them on a parchment paper covered baking sheet. Brush some olive oil on each mini pizza, and pop in the oven. Cook the pizzas till they are golden and cooked. About 15 minutes.
In a bowl mix together equal parts of blue cheese, and mascarpone. It depends on how many pizzas you’re making, but mix enough to cover each mini pizza.
Once the dough is cooked, take out of the oven and smear the mixed cheese on each mini pizza. Pop back into the oven for about 2 minutes, till the cheese is melted.
Finish them off with some chopped up parsley, and black pepper. Snack away!
