BLT with Red Onions and Cilantro:
- Bread of your choice (I used peasant bread)
- Lettuce (shredded)
- Tomato (sliced)
- Red Onion (sliced)
- Cilantro (picked off stem)
- Salt and Pepper
- Extra Virgin Olive Oil
This is a tiny twist on the classic BLT. Just by adding some fresh herbs, red onion, and seasoning everything well, you get a BLT that has way more flavor than the average. I guess you can call it a BLTROC…or…BLTOC, no BLTCO…
First cook your bacon. I got really tasty bacon from my local butcher, and it tends to shrink a great deal when you cook it. So for one sandwich I cooked seven slices. Once bacon is cooked, lay on a paper towel to absorb any oil.
Now spread all your other fixings on a plate (lettuce, tomato, onion, cilantro) and season everything with salt and pepper, and drizzle a little bit of olive oil over everything. I think seasoning every little thing that goes into a sandwich make it so much better.
Toast your bread, and assemble!!
Spread a good amount of mayo on both slices of bread. Add lettuce, then tomato, bacon, onion, lastly cilantro. Put the sandwich together, cut in half, and done!
Serve with some extra mayo if needed. Enjoy!
